WINGSTOP UK (Lemon Pepper Holdings Ltd) just opened its 100th restaurant. In Inverness.
It had around 55 sites when Sixth Street bought the business at the end of 2024. The price was £428m. £412m of that was goodwill.
They didn't buy kitchens, property, or equipment. They bought a feeling, and feelings don't show up on traditional dashboards. But apparently, that feeling can get you a valuation at roughly 3x the market EV/EBITDA multiple.
The CEO Chris Sherriff says customers increasingly seek out brands that offer a memorable experience. The same announcement introduced a new Chief AI Officer, Jordan Yankovich, hired to build "the world's most AI native restaurant brand."
But opening 30 sites a year means the distance between what the brand promises and what a random Tuesday visit actually delivers grows every single month.
That distance is the £412m. And it's the only thing on the balance sheet nobody gets a live reading on.
Ops dashboards tell you a store is busy. They don't tell you it's still good.
