What if 55% of your recipes include egg, and the price moves almost every week?
One catering group we spoke to is in exactly that position. Updating those recipes by hand across 50 menus is not sustainable, and the same holds in a library of a few hundred recipes: changing one ingredient can mean opening hundreds of them.
